Soften the frozen fruit
- Let the frozen bananas and frozen strawberries sit at room temperature for 5 minutes to slightly soften, so they blend without large icy bits.
Blend into creamy nice cream
- Add the softened bananas, strawberries, lemon juice, vanilla extract, and salt to a high-powered blender and blend, stopping to scrape down the sides as needed.
- Blend until completely smooth and creamy for about 2 minutes, until the mixture looks like vivid pink soft-serve.
Serve or freeze for scoops
- Serve immediately as soft-serve for the creamiest texture, or transfer to a container and freeze for 1–2 hours for a scoopable texture.
Top and finish
- Top the nice cream with fresh strawberries and serve at once.
Notes
For the best texture, use ripe bananas that are fully frozen in thin slices so the blender can turn them into a smooth, ice-cream-like swirl quickly. Store covered in the freezer up to 1 week; let it sit 3–5 minutes at room temperature before scooping. Freezing is not a problem, but repeated thaw/refreeze can loosen texture. To make it nut-free and dairy-free, this recipe already fits—just use standard vanilla extract and check labels for any added ingredients if needed.
