Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts Trim and pat dry for best browning.
  • 0.5 tsp salt Season generously; adjust to taste.
  • 0.5 tsp pepper Use freshly ground if possible.
  • 0.5 tsp garlic powder Season the chicken evenly.
  • 0.25 tsp dried thyme Add to the chicken seasoning mix.
Searing and sauce
  • 2 tbsp olive oil For searing the chicken.
  • 2 tbsp butter Adds richness after searing.
  • 8 oz cremini mushrooms Slice and cook until deeply golden.
  • 4 garlic Minced cloves.
  • 0.5 cup dry red wine Use for deglazing and reduction; substitute white wine if preferred.
  • 1 cup chicken broth Forms the base for the creamy reduction.
  • 0.5 cup heavy cream Makes the sauce silky.
  • 1 tsp Dijon mustard Adds tang and helps thicken slightly.
  • 1 tbsp fresh thyme leaves Stir in for herb flecks.
  • 0.25 cup fresh thyme sprigs For garnish before serving.

Method
 

Season and sear the chicken
  1. Season the chicken generously with salt, pepper, garlic powder, and dried thyme. Heat olive oil in a large skillet over medium-high heat until hot, then sear the chicken 5-6 minutes per side until golden and cooked through to 165°F, and remove.
Sauté mushrooms and build the wine sauce
  1. Melt butter in the same pan, then cook sliced cremini mushrooms over medium-high heat for 5-6 minutes until deeply golden. Stir in minced garlic and cook for 1 minute.
  2. Pour in the dry red wine and deglaze the pan, scraping up all browned bits. Simmer for 3 minutes.
  3. Add chicken broth, heavy cream, Dijon mustard, and fresh thyme leaves. Simmer for 5-6 minutes until the sauce thickens.
Finish and serve
  1. Return the chicken to the pan and spoon the mushroom wine sauce over each breast. Garnish with fresh thyme sprigs and serve.

Notes

For a darker, glossier sauce, don’t crowd the skillet and let the wine simmer until the raw smell cooks off (about 3 minutes). Refrigerate leftovers in an airtight container for up to 3 days; reheat gently in a skillet to avoid breaking the cream. Freezing is not recommended because the cream can separate. If you want a lighter option, use half-and-half instead of heavy cream for a thinner but still flavorful sauce.
