Preheat and prep
  1. Preheat the oven to 375F and grease a 9x13 baking dish.

Make the GF vegan oat crumble
  1. Combine the certified GF rolled oats, almond flour, brown sugar, cinnamon, and salt, then cut in the cold solid coconut oil with a fork until crumbly.
  2. Drizzle maple syrup over the crumble mixture and toss until clumps form.
Bake and serve
  1. Scatter the crumble over the apples, then bake for 40-45 minutes at 375F until golden and bubbling.
  2. Serve the apple crisp warm with coconut ice cream.

Notes

For the best topping, keep the coconut oil cold until the last moment so it creates larger crunchy clumps. Store leftovers covered in the fridge up to 4 days and reheat in the oven at 300F until warmed through. Freezing is not recommended because the oat topping can soften. For a lower-sugar option, use coconut sugar in both places to keep the same texture and bake time.
