Ingredients

Fruit crisp topping
  • 1.5 cup rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar, packed
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp salt
  • 0.75 cup cold unsalted butter, cubed
  • 2 tbsp granulated sugar
  • 0.5 cup chopped nuts Optional add-in.
  • 0.25 cup shredded coconut Optional add-in.

Equipment

  • 1 sheet pan

Method

Make the crumble base
  1. Combine rolled oats, all-purpose flour, brown sugar, granulated sugar, cinnamon, nutmeg, and salt in a large bowl.
  2. Add the optional chopped nuts and shredded coconut, then toss to combine evenly.
Form chunky clumps
  1. Add the cold cubed butter and work it into the mixture with your fingertips, two forks, or a pastry cutter until large chunky clumps form.
  2. Stop when some pea-sized butter pieces remain, because they help create a tender, crunchy crumble after baking.
Top and bake (or chill/freeze)
  1. Use the topping immediately over your prepared fruit filling, or refrigerate in an airtight container up to 5 days or freeze up to 3 months.
  2. Bake over any fruit filling at 375°F for 35-45 minutes until deeply golden.

Notes

For the biggest crumble clumps, keep the butter very cold and avoid over-mixing—pea-sized bits are ideal. Refrigerate topping (uncooked) up to 5 days; freeze up to 3 months, then thaw in the fridge before using. If you want a dairy-free option, replace butter with a plant-butter substitute that contains at least 70% fat (results vary).
