Prep and blend
- Preheat the oven to 350°F and grease an 8x8 or 9x9 baking dish.
- Blend the cottage cheese in a blender until completely smooth.
Mix the custard
- Whisk the blended cottage cheese with pumpkin puree, eggs, maple syrup, brown sugar, pumpkin pie spice, cinnamon, vanilla, and salt until smooth.
- Stir in the old-fashioned oats, then pour the mixture into the prepared baking dish.
Bake and serve
- Bake for 40–45 minutes, until the center is set and the top is golden-brown.
- Serve warm with additional maple syrup and pecans.
Notes
For the silkiest texture, blend the cottage cheese until no curds remain before whisking. Store leftovers covered in the fridge for up to 4 days; reheat individual portions in the microwave until warm. Freezing is not recommended because the custard texture can change after thawing. For a higher-protein swap, use low-fat cottage cheese; the bake will still set with the same bake time.
