Bake the strawberry cake cupcakes

- Beat the cream cheese and softened butter until smooth. Scrape the bowl as needed for a lump-free base.
- Add the powdered sugar, freeze-dried strawberry powder, and vanilla extract, then beat until fluffy and pink. Mix only until smooth so the frosting pipes cleanly.
Assemble the cupcakes
- Pipe or swirl the frosting generously on each cooled cupcake. Aim for a thick top layer so the coating can fully encrust it.
- Roll or press the frosted top of each cupcake into the strawberry crunch coating, coating generously. Press lightly so the pink-and-gold crumbs adhere without scraping off frosting.
- Top each cupcake with a fresh strawberry slice and serve. Slice right before serving for the freshest look and flavor.
