Ingredients

Beef stew meat or sirloin
  • 2 lb beef stew meat or sirloin cut into 1.5-inch cubes
Seasonings
  • 1 salt to taste
  • 1 pepper to taste
  • 1 garlic powder to taste
  • 1 tsp dried italian seasoning
  • 1 tsp onion powder
Garlic butter base
  • 2 tbsp olive oil
  • 6 tbsp butter cubed
  • 6 garlic minced
Sauce
  • 1 tsp beef broth 1/2 cup total
  • 1 tbsp worcestershire sauce
  • 1 tbsp soy sauce
Garnish and serving
  • 1 fresh parsley for garnish
  • 1 mashed potatoes or egg noodles for serving

Equipment

  • 1 cast iron skillet
  • 1 Dutch oven

Method

Season and sear the beef
  1. Season the beef generously with salt, pepper, and garlic powder.
  2. Heat olive oil in a hot cast iron skillet over high heat, then sear the beef in batches for 2-3 minutes per side until deeply browned; transfer to a Dutch oven.
Slow cook in garlic butter sauce
  1. Add butter, garlic, dried Italian seasoning, onion powder, beef broth, Worcestershire sauce, and soy sauce to the slow cooker (Dutch oven).
  2. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the beef is fork-tender.
Finish and serve
  1. Stir gently to coat the beef in the garlic butter sauce, then taste and adjust seasoning.
  2. Serve the beef bites over mashed potatoes or egg noodles and garnish with fresh parsley.

Notes

Pro tip: be sure to sear in batches so the beef browns instead of steams, which helps the sauce cling to the cubes. Refrigerate leftovers in a sealed container for up to 4 days; reheat until hot throughout. Freezing: yes, freeze up to 3 months (best texture when reheated gently). For a lower-carb option, serve over cauliflower mash instead of mashed potatoes.
