Make dough
- Beat softened unsalted butter with brown sugar and granulated sugar until smooth.
- Add blotted pumpkin puree, then beat in eggs and vanilla until combined.
- Fold the flour mixture into the wet ingredients until just incorporated.
- Fold in dark chocolate chips so they’re evenly distributed.
Bake and finish
- Scoop 2-tablespoon rounds onto the lined baking sheets with space between them.
- Bake at 375F for 10-12 minutes until set at the edges and still soft in the center, with a slightly cracked surface.
- Sprinkle flaky sea salt immediately after baking while cookies are hot.
Notes
Pro tip: blot the pumpkin puree well before mixing so the cookies bake up fudgy instead of cakey. Store baked cookies in an airtight container at room temperature for up to 4 days; refrigerate up to 7 days if your kitchen is warm. Freeze baked cookies up to 2 months (thaw at room temperature). For a dairy-free swap, use a 1:1 vegan butter substitute and choose dairy-free chocolate chips.
