Method
Bake the pumpkin bars
- Preheat the oven to 350F and grease a 15x10 jelly roll pan or rimmed baking sheet.
- Whisk together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
- Beat the eggs, granulated sugar, vegetable oil, pumpkin puree, and vanilla extract until smooth.
- Fold in the flour mixture until just combined, then pour the batter into the prepared pan.
- Bake for 25-30 minutes until a toothpick comes out clean and the edges pull away from the sides.
- Cool the bars completely before frosting.
Frost and finish
- Beat the cream cheese and unsalted butter until smooth and fluffy.
- Beat in the powdered sugar, vanilla, and cinnamon until the frosting is smooth.
- Spread the frosting over the cooled bars.
- Dust the top with cinnamon, then refrigerate for 30 minutes before cutting into bars.
Notes
Pro tip: cool the bars fully so the cream cheese frosting doesn’t melt or slide. Refrigerate leftovers in a covered container up to 4 days; freezing is yes (freeze bars airtight up to 2 months) and thaw in the fridge overnight. For a lighter option, use reduced-fat cream cheese (texture stays creamy, flavor stays close).
