Ingredients
  

Peaches and berries
  • 5 peaches Ripe, pitted and sliced.
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup strawberries Hulled and sliced.
  • 1 cup watermelon Cubed.
Honey-lime dressing
  • 3 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 0.25 tsp vanilla extract
  • fresh mint leaves for garnish For garnish just before serving.

Method
 

Assemble the fruit
  1. Slice the peaches and add them to a large serving bowl with the blueberries, raspberries, strawberries, and watermelon.
  2. Make sure the fruit is evenly combined so the dressing can coat every piece.
Mix the dressing
  1. Whisk together the honey, lime juice, lime zest, and vanilla extract until smooth and fully combined.
Dress and chill
  1. Drizzle the honey-lime dressing over the fruit and toss gently until every piece is coated.
  2. Taste and add more honey or lime juice as desired for your preferred sweetness and tang.
  3. Refrigerate the fruit salad for 20 minutes before serving to let flavors meld.
Finish and serve
  1. Garnish with fresh mint leaves just before serving.

Notes

For the best texture, use peaches that yield slightly to pressure and cut them into similar-size slices so the dressing coats evenly. Store covered in the refrigerator up to 2 days (berries may soften slightly). Freezing isn’t recommended because watermelon and berries release lots of water when thawed. If you want a dairy-free option, this recipe is already dairy-free; for lower sugar, reduce honey to 2 tbsp and add extra lime juice to keep it bright.
