Ingredients

No-Bake Pumpkin Bites
  • 1.5 cup old-fashioned rolled oats
  • 0.5 cup pumpkin puree Blot very dry before mixing.
  • 0.333 cup almond butter or peanut butter
  • 3 tbsp maple syrup or honey
  • 0.25 cup ground flaxseed
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 0.25 tsp salt
  • 0.333 cup mini chocolate chips or white chocolate chips
  • 1 cinnamon sugar for rolling

Method

Prep and blot the pumpkin
  1. Blot the pumpkin puree very dry until no excess moisture looks visible.
Mix the no-bake base
  1. Combine the pumpkin puree, rolled oats, almond butter or peanut butter, maple syrup or honey, ground flaxseed, pumpkin pie spice, cinnamon, vanilla, salt, and mini chocolate chips; stir until fully mixed.
Chill to firm
  1. Refrigerate the mixture for 20 minutes until firm enough to roll.
Shape and coat
  1. Scoop into tablespoon-sized balls and roll in cinnamon sugar until coated.
Set and store
  1. Refrigerate until firm, then store in an airtight container in the fridge up to 1 week.

Notes

For cleaner rolling, chill until the mixture holds shape and re-coat with cinnamon sugar if any spots look bare. Store in an airtight container in the refrigerator for up to 1 week; freezing is not recommended because oats can soften when thawed. If you want a dairy-free option, the recipe already fits; for nut-free, use sunflower seed butter in place of almond/peanut butter (keep the same amount).
