Ingredients

Pumpkin or butternut squash
  • 1 1 small pumpkin or butternut squash, cut into wedges
Red onion
  • 1 1 large red onion, cut into wedges
Olive oil
  • 3 tbsp olive oil
Hot honey
  • 3 tbsp hot honey or regular honey + 1/2 tsp chili flakes
Smoked paprika
  • 1 tsp smoked paprika
Cumin
  • 0.5 tsp cumin
Salt and pepper
  • 1 salt and pepper
Feta cheese
  • 4 oz feta cheese, crumbled
Walnuts
  • 0.33 cup walnuts, toasted
Fresh herbs
  • 1 fresh herbs (parsley or thyme) for serving

Equipment

  • 1 sheet pan

Method

Roast the pumpkin and onions
  1. Preheat oven to 425F, then line a large baking sheet for easy release and browning. Slide the sheet in only after it’s hot.
  2. Toss pumpkin and red onion with olive oil, half the hot honey, smoked paprika, cumin, salt, and pepper until evenly coated. Spread them cut-side down in a single layer with space between pieces.
  3. Roast at 425F for 30-35 minutes, flipping halfway, until caramelized and tender. Look for deep golden edges and softened wedges.
Finish and serve
  1. Arrange the roasted pumpkin and red onion on a platter, then scatter feta and toasted walnuts over. Add them while hot so the topping warms slightly.
  2. Drizzle the remaining hot honey over everything, creating a glossy coating on the caramelized surfaces. Finish with fresh herbs for color and aroma.

Notes

For the best caramelization, avoid overcrowding the sheet pan so moisture can escape and edges can char. Store leftovers in the refrigerator up to 3 days; rewarm on the sheet pan in a 425F oven for about 8-10 minutes. Freezing isn’t recommended because squash texture softens after thawing. For a dairy-free swap, use a feta-style plant-based crumble and keep the hot honey drizzle the same.
