Ingredients

For apple filling
  • 6 large apples peeled and sliced
  • 0.25 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
For oat topping
  • 1.5 cup rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 cup unsalted butter melted
For serving
  • 1 vanilla ice cream

Equipment

  • 1 slow cooker
  • 1 sheet pan

Method

Prepare the apple filling and slow-cooker base
  1. Toss the sliced large apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice, then place them in the slow cooker.
  2. Lay a double layer of paper towels under the lid to absorb excess moisture.
Make the oat crumble topping
  1. Combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, and salt.
  2. Drizzle in melted unsalted butter and stir until the mixture forms clumps.
  3. Scatter the oat topping over the apples in the slow cooker, and do not stir.
Cook and finish for crisp topping
  1. Cook on Low for 2.5-3 hours, until the apples are tender and the topping is set.
  2. For a crispier topping, transfer to an oven-safe dish and broil for 3-4 minutes.
Serve
  1. Serve warm with vanilla ice cream.

Notes

For clean portions, let the crisp sit in the slow cooker for 5-10 minutes after cooking so the topping sets further. Refrigerate leftovers in a covered container for up to 4 days; reheat individual servings in the microwave until warm. Freezing is not recommended because the oat topping can soften after thawing. For a lighter option, use unsalted butter substitutes and reduce the sugar slightly (brown sugar and granulated sugar) to taste.
