Blend into smooth pineapple soft serve
- Add the full-fat cottage cheese, frozen pineapple chunks, honey or agave, lemon juice, vanilla extract, and salt to a high-powered blender. Blend until completely smooth, using a visual check for no cottage cheese lumps.
- Blend on high for at least 2 minutes until the texture looks silky and pourable. Pause and scrape down if needed, and keep blending until the mixture is uniform.
- Taste the mixture and adjust sweetness by adding more honey or agave if desired. Stop once the flavor matches your preferred sweetness level.
- Transfer the mixture to a piping bag with a star tip. Pipe into cups to form a classic Dole Whip swirl with a visible ridged texture.
- Serve immediately to keep the soft-serve texture from firming up. The swirl should hold shape in the cup and look glossy and creamy.
Notes
For the creamiest, true “soft serve” texture, use frozen pineapple that’s straight from the freezer and blend long enough to fully eliminate lumps (at least 2 minutes). Store in an airtight container in the freezer up to 1 month; let sit 2–3 minutes at room temperature and re-stir or re-blend for a smoother scoop. For a dairy-light option, use high-protein nonfat Greek yogurt instead of cottage cheese for a similar tang and protein boost.
