  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
Cream cheese ranch mixture
  • 8 oz cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
Topping
  • 8 strips bacon, cooked crispy and crumbled
  • 1.5 cup shredded cheddar cheese
  • 1 tbsp fresh chives, chopped
  • Extra chives and bacon for topping

Method
 

Prep and bake
  1. Preheat oven to 375°F and grease a 9x13 baking dish. This ensures the chicken bakes evenly from the start.
  2. Season the chicken breasts lightly with salt and pepper and place them in the prepared dish. Arrange them in a single layer so they cook at the same pace.
  3. Beat the softened cream cheese with the ranch seasoning mix until smooth. Spread this mixture thickly over each chicken breast so it bakes into a creamy layer.
  4. Top each breast with crumbled bacon and shredded cheddar cheese. Make sure the bacon is distributed and the cheddar covers the surface for caramelized spots.
  5. Bake for 25-30 minutes until the topping is golden and bubbly and the internal temperature reaches 165°F. Watch for bubbly edges and a lightly browned, caramelized top.
Finish and serve
  1. Garnish with extra fresh chives and crumbled bacon and serve immediately. This keeps the topping hot, set, and at its best texture.

Notes

For easiest spreading, soften the cream cheese until you can press it with a finger (microwave in 10-second bursts if needed). Refrigerate leftovers in a sealed container for up to 3 days; reheat in a 350°F oven until warmed through. Freezing is not recommended because the cream cheese-ranch topping can become grainy after thawing. For a lighter option, use reduced-fat cream cheese and half the cheddar for a similar flavor with less saturated fat.
