Make the apple filling
- Cook the apples with butter, brown sugar, cinnamon, nutmeg, allspice, and cornstarch in a Dutch oven over medium heat for 5-7 minutes until softened and thickened, stirring often as the juices reduce. The mixture should look glossy and hold together when stirred.
- Cool the apple filling completely before assembling the egg rolls so the wrappers don’t soften or burst during frying.
Assemble the egg rolls
- Place 2-3 tablespoons of apple filling in the center of each egg roll wrapper. Keep a border around the edges for easier sealing.
- Fold the sides over and roll tightly, keeping the filling contained. Press along the seam to keep it from opening.
- Seal the rolled egg roll with beaten egg along the final edge. Let the seam set briefly so it sticks securely.
Fry and coat
- Heat vegetable oil to 350F in the Dutch oven, maintaining the temperature as you fry. The oil should shimmer lightly when ready.
- Fry the egg rolls for 2-3 minutes per side until deeply golden, turning once. The wrappers should be crisp and evenly browned.
- Drain the egg rolls on paper towels and immediately roll them in cinnamon sugar while hot. The coating should cling to the surface.
Serve
- Serve the apple pie egg rolls with caramel sauce for dipping. Add extra caramel as desired.
Notes
Pro tip: cool the apple filling completely before filling and sealing so the egg roll wrappers stay crisp. Store leftovers in the refrigerator up to 3 days; reheat in a 350F oven for 8-10 minutes to regain crunch. Freezing is not recommended because fried wrappers lose texture. For a lighter swap, use a reduced-sugar caramel sauce and consider using an allulose or sugar substitute for the cinnamon sugar coating.
