Ingredients

Brownie mix base
  • 1 box (18 oz) dark chocolate or fudge brownie mix Use the mix as directed by the package except do not add eggs or oil.
  • 1 can (15 oz) pumpkin puree Replaces eggs and oil entirely.
  • 0.5 tsp pumpkin pie spice
  • 0.5 tsp cinnamon
  • 0.25 cup dark chocolate chips Optional; fold in.
  • 0.25 powdered sugar For dusting after cooling.

Equipment

  • 1 sheet pan

Method

Prep and preheat
  1. Preheat the oven to 350°F, then grease a 9x13 baking pan. This prevents sticking so the thick batter releases cleanly.
Mix the batter
  1. Combine the dark chocolate or fudge brownie mix, pumpkin puree, pumpkin pie spice, and cinnamon in a bowl and stir until completely smooth. The batter will be very thick, and that’s correct—do not add eggs or oil from the box.
  2. Fold in the dark chocolate chips if using. Mix only until evenly distributed so the batter stays dense.
Bake and finish
  1. Spread the batter evenly in the prepared pan using a spatula, since the batter is dense. Cover the corners and smooth the top as evenly as possible.
  2. Bake for 23–26 minutes at 350°F until a toothpick comes out clean. The centers should look set, not wet.
  3. Cool the brownies completely, then dust the top with powdered sugar and cut into 16 bars. Completely cooled brownies slice with cleaner edges and hold their shape.

Notes

Pro tip: for the most even cuts, chill the fully cooled brownies 30 minutes before slicing. Store airtight at room temperature up to 3 days or refrigerate up to 5 days. Freeze bars up to 2 months. Dietary swap: use a gluten-free brownie mix to keep the same pumpkin-based, egg-free, oil-free texture.
